2 parts Salt
1 part fresh fine ground Black Pepper
1 part Cayenne Pepper
2.5 parts Paprika
2 part Garlic Powder
1 part Onion Powder
1 part Oregano Powder
1 part Powdered Thyme
That is the basic seasoning recipe, just use it as a salt replacement for your favorite dishes from chicken to fish to pasta. But there are a couple of ways you can completely change the entire flavor profile.
Just add 1.5 parts Celery Seed and it will give the blend a New England twist similar to Old Bay Seasoning. Great for Crab or even Potato Chips or to top your Clam Chowder.
If you want to sweeten things up a bit you can turn this blend into a sweet and spicy sticky rub great on pork ribs or shrimp. This can be done by just adding 2.5 parts brown sugar.
Blend together and keep in an airtight container. The uses for this blend are endless it really goes well on everything.
I adapted this recipe from Chef Paul Prudhommes Blackening Seasoning Mix which goes a little something like this:
1 tablespoon sweet paprika
2 1/2 teaspoons salt
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon cayenne
3/4 teaspoon white pepper
3/4 teaspoon black pepper
1/2 teaspoon dried thyme leaves
1/2 teaspoon dried oregano leaves
